Fresh from the Gardyn: Simple & Delicious Recipes from Your Indoor Harvest

Updated: Oct 14

Here on our homestead, we’ve learned that growing food isn’t just something we do outside — it’s a lifestyle that follows us indoors, too. While our outdoor beds rest and the soil rebuilds itself for the next season, our Gardyn aeroponic towers keep right on producing. Fresh herbs, crisp greens, and colorful peppers continue to grow under the gentle hum of the lights, giving us a steady harvest even when the frost is settling in.

We started GrowWithGardyn.com because we know how rewarding (and sometimes challenging) growing indoors can be. We’ve been there — wondering why something isn’t thriving or how to make the most of the space we have. With a little patience and the right guidance, though, your Gardyn can become one of the most abundant “garden beds” you’ve ever tended.

To show what’s possible, we wanted to share a few of our favorite recipes made entirely from Gardyn-grown produce. These are the kinds of meals we actually make here at home — simple, wholesome, and full of that unmistakable “fresh-picked” flavor.

Kale & Herb Pesto Wraps

Perfect for a quick lunch or light dinner, these wraps celebrate the bold, earthy flavor of Gardyn-grown kale with a burst of fresh herbs.

Ingredients:

  • 2 cups kale leaves, stems removed

  • 1 cup mixed herbs (we love basil, parsley, and oregano)

  • 2 cloves garlic

  • ¼ cup olive oil

  • ¼ cup nuts or seeds (walnuts, almonds, or sunflower seeds work great)

  • Juice of half a lemon

  • Salt and pepper to taste

  • Whole-grain wraps or tortillas

Directions:

  1. In a food processor, blend kale, herbs, garlic, and nuts.

  2. Slowly drizzle in olive oil and lemon juice until smooth. Season with salt and pepper.

  3. Spread pesto on a wrap, add your favorite fillings (grilled chicken, roasted veggies, or fresh sprouts), and roll it up.

Simple, nutrient-packed, and bursting with the flavor of homegrown greens.

Chard & Pepper Garden Stir-Fry

This one’s a weeknight favorite — colorful, quick, and endlessly versatile.

Ingredients:

  • 2 tablespoons olive oil or coconut oil

  • 3 cups rainbow chard, chopped

  • 2 Gardyn-grown peppers, sliced

  • 1 small onion, sliced thin

  • 2 cloves garlic, minced

  • 2 tablespoons soy sauce or coconut aminos

  • 1 teaspoon honey (optional)

  • Cooked rice or noodles for serving

Directions:

  1. Heat oil in a skillet or wok over medium-high heat.

  2. Add onion, peppers, and garlic; sauté until fragrant.

  3. Toss in the chard and cook until just wilted.

  4. Stir in soy sauce and honey, then serve hot over rice or noodles.

A bright, nourishing meal straight from your Gardyn to the table — no trip to the grocery store required.

Creamy Green Bean & Herb Pasta

A heartier dish that turns your Gardyn harvest into a cozy, crowd-pleasing meal.

Ingredients:

  • 8 oz pasta of your choice

  • 2 cups fresh green beans, trimmed

  • 1 tablespoon butter or olive oil

  • 2 cloves garlic, minced

  • ½ cup cream or coconut milk

  • ½ cup freshly grated Parmesan cheese (optional)

  • 2 tablespoons chopped fresh herbs (basil, parsley, thyme)

  • Salt and pepper to taste

Directions:

  1. Cook pasta according to package directions. In the last 3 minutes of cooking, add the green beans to the pot. Drain and set aside.

  2. In a skillet, melt butter and sauté garlic until fragrant.

  3. Stir in cream and herbs, simmering for 2–3 minutes.

  4. Add the pasta and green beans, toss to coat, and finish with Parmesan.

It’s creamy, comforting, and full of flavor — proof that fresh-picked ingredients really do make all the difference.
